This recipe serves two. Cooked green bananas are a popular source of carbohydrates in Ugandan cuisine. Here they are served with lamb and peanut butter sauce. Vegetarians can serve it without the meat.
Green Bananas
Ingredients
5 Green bananas peeled
Salt to taste
Method
In a saucepan add water and boil the peeled green bananas until soft
Next drain all the water
Finally mash the green bananas
Slow cooked lamb
Ingredients
300g of lean lamb cubed
8 cloves of garlic finely chopped
2 tbsp of malt vinegar
Salt to taste
Method
In a saucepan add the lamb, garlic, vinegar, salt and simmer until the lamb is cooked
Once the lamb is cooked and the water has dried, brown the lamb stirring all the time
Peanut butter sauce
Ingredients
2 tbsp smooth peanut butter
1 large onion finely chopped
2 large tomatoes finely chopped
1 tbsp rapeseed oil
Salt to taste
Method
In a saucepan heat the oil and saute the onions until golden
Next add the tomatoes and stir until soft and mixed with onions
Then add 1 cup boiled water or more depending on the consistency desired, stir in the peanut butter
Finally let all the ingredients simmer for about 15mins
