Pancakes are an easy versatile meal which can be savoury or sweet. Most of all pancakes involve a few cheap ingredients, you can batch make and freeze them and they are great for breakfast, lunch, dinner or as a snack. Try adding some fresh fruits into your pancake mix instead of sugar or even better if savoury add some grated vegetables. Pancakes are easy to make and fun especially if you get your kids involved in making them and you can make quite a few pancakes with your mixture!
Here is my quick and easy pancake recipe, enjoy!
1 cup of self-raising flour
1 cup of your choice of milk-semi skimmed or dairy free milk such as soya/almond milk
1 tsp of baking powder
1 tbs of cocoa powder
1 tbs flaxseed-optional
½ cup of oats
Pinch of salt
1 ripe banana mashed
1 tsp of vanilla essence
2 tbs of frozen berries
Handful of almond flakes-optional
Honey/maple syrup to drizzle-optional
- In a large bowl sieve the flour and baking powder, followed by oats, salt, cocoa powder and flaxseed and mix until all combined.
- Make a well in the middle add the milk, mashed banana and vanilla essence and whisk until smooth mixture. If mixture is too thick add more milk.
- Heat a pan with 1 tsp of oil, add 1-2 tbs of pancake mixture using a rounded large spoon or ladle and allow to cook for 1-2 minutes on each side until fluffy and cooked through.
- Heat the frozen berries in a pan until runny consistency; stack pancakes, top with frozen berries, almond flakes and drizzle of honey
