Savoury porridge

This recipe serves 2. Oats are a high source of fibre, and in this recipe salt and vegetables are added instead of sugar and fruit. It is a simple East African recipe using only 5 ingredients and it can be cooked in less than 30 minutes.

1 large onion finely chopped
2 handfuls of cherry tomatoes quartered
1 teacup oats
3 teacups water (add more if required)
1-2 tbs garlic infused olive oil
Salt to taste

 – Coriander to garnish


  1. In a saucepan, heat the oil, add the onions and saute until golden
  2. Next add the quartered cherry tomatoes and stir until soft
  3. Then add 3 cups of boiling water
  4. Finally add the oats and simmer for about 10 minutes – stirring all the time ( add more water if required)

Garnish with coriander
