Baked Berry Oats recipe

This recipe serves 4 and is quick and healthy. Porridge oats are a source of fibre and great to include for breakfast. There are so many ways to cook with oats and this one incorporates fresh fruits for natural sweetness.

Ingredients
2 cups of oats
2 cups of soya milk or dairy based milk
1 cup of fresh raspberries
1 cup of fresh blueberries
2 eggs
2 ripe bananas sliced
Handful of flaked almonds
Yoghurt to serve-optional

Method
Pre heat oven to 180 degrees celsius gas mark 4
Place the sliced bananas onto an ovenproof dish
Scatter ½ the raspberries and blueberries and all the flaked almonds
Cover fruit with oats
In a jug beat the eggs, add the soya milk and mix well
Pour mixture over oats until covered
Scatter remaining raspberries and blueberries and bake in the oven for 20-25 minutes until oats have soaked up the liquid and turned golden brown

Tips
Can use frozen or dried fruit
Add some nuts and seeds
