Baked Berry Oats recipe

Baked berry oats

This recipe serves 4 and is quick and healthy. Porridge oats are a source of fibre and great to include for breakfast. There are so many ways to cook with oats and this one incorporates fresh fruits for natural sweetness.

Ingredients
2 cups of oats
2 cups of soya milk or dairy based milk
1 cup of fresh raspberries
1 cup of fresh blueberries
2 eggs
2 ripe bananas sliced
Handful of flaked almonds
Yoghurt to serve-optional

Method

  1. Pre heat oven to 180 degrees celsius gas mark 4
  2. Place the sliced bananas onto an ovenproof dish
  3. Scatter ½ the raspberries and blueberries and all the flaked almonds
  4. Cover fruit with oats
  5. In a jug beat the eggs, add the soya milk and mix well
  6. Pour mixture over oats until covered
  7. Scatter remaining raspberries and blueberries and bake in the oven for 20-25 minutes until oats have soaked up the liquid and turned golden brown

Tips
– Can use frozen or dried fruit
– Add some nuts and seeds
