This recipe serves 2, a great hearty meal that incorporates plenty of colourful vegetables and a good way to get your 5ADAY. This recipe is also high in fibre and an easy one pot meal that is quick, healthy and easy.
Ingredients
1 large onion sliced into rounds
2 courgettes sliced
1 large aubergine quartered
2 bell peppers quartered
2 tomatoes chopped remove seeds and place aside
2 tbs rapeseed oil
Low fat grated cheese
Salt and pepper to taste
Method
In a large pan, heat the oil, add the onions and saute until browned
Next add the courgettes, peppers and aubergines mix well and allow to cook on a medium heat until softened
Add tomatoes and some water if required and simmer gently
Finally add the seeds of the tomatoes, season with salt and pepper
Place mixture into dish and garnish with cheese
Optional
Add pulses such as chickpeas for extra protein
Add breadcrumbs as a topping
