This recipe serves 2, a great hearty meal that incorporates plenty of colourful vegetables and a good way to get your 5ADAY. This recipe is also high in fibre and an easy one pot meal that is quick, healthy and easy.
Ingredients
1 large onion sliced into rounds
2 courgettes sliced
1 large aubergine quartered
2 bell peppers quartered
2 tomatoes chopped remove seeds and place aside
2 tbs rapeseed oil
Low fat grated cheese
Salt and pepper to taste
Method
- In a large pan, heat the oil, add the onions and saute until browned
- Next add the courgettes, peppers and aubergines mix well and allow to cook on a medium heat until softened
- Add tomatoes and some water if required and simmer gently
- Finally add the seeds of the tomatoes, season with salt and pepper
- Place mixture into dish and garnish with cheese
Optional
– Add pulses such as chickpeas for extra protein
– Add breadcrumbs as a topping
