Ingredients
2 onions 1 potato
1 carrot 100g butternut squash
1 small aubergine handful of mixed peppers
1 sweet potato 1 beetroot
50g chickpeas 1 potato
50g lentils
1 radish
1 cauliflower
½ tbs of olive oil
1-2 tomatoes
For the curry paste
2/3 fresh chili A thumb sized piece of fresh ginger
2 cloves of garlic 1 tsp dry coriander
1 tsp ground cumin ½ tsp turmeric powder
½ cup of grated coconut Pinch of Garam masala/spices for flavour
½ cup of coconut milk
Salt to taste
Method
1, Dice the onion, chilli, dry coriander, ginger and garlic
2, Heat the oil in a pan, add the onion mixture, cumin, turmeric, garam masala and grated coconut and mix well
3, Add all the vegetables and cook until tender
4, Add the chopped tomatoes, coconut milk and simmer for five minutes
5, Season with salt and pepper and serve with rice, bread, naans or chapattis
