This recipe serves 2, is under 30 minutes, simple and healthy. Salmon is a good source of omega 3 served along with steamed broccoli, boiled potatoes and a parsley sauce. Healthier methods of cooking have been used here i.e. steaming, boiling and baking.
Ingredients
2 salmon fillets
2 shallots thinly sliced
1 lemon juiced
1 red pepper diced
2 handfuls of baby potatoes with skin on
2 handfuls of broccoli stems
Salt, pepper and dried mixed herbs to taste
Sauce
1 tbs plain flour
1 tbs olive based spread
2 teacups of semi skimmed milk/use more if required
Handful of chopped parsley
Cornflour-optional
Method
Pre heat oven to 200 degrees/gas mark 6
Salmon:
Potatoes:
Broccoli:
Steam broccoli until tender
